how did the word gravy get started to refer to red sauce in america?

I’m sure it started in America long ago when the Italians emigrated here from Italy. The basic Ragu is supposed to be made with fresh vine ripened tomatoes (not canned), spices (garlic, oregano, etc), and meats (beef, chicken, pork) all cooked together. The meats, when thoroughly cooked through, were removed to be served separately and the tomatoes and spices continued to cook for hours to “boil down” and thicken into a gravy consistency. Hence, many Italian families called this Sunday topping for their macaroni “gravy”.
